Roasting Vegetables by Texture
Group vegetables by cooking speed. Carrots and potatoes take longer than zucchini or asparagus, so start them first or use separate pans.
What you need
- Firm roots
- Soft vegetables
- Oil
- A large sheet pan
Put it into practice
Cut firm vegetables smaller than soft ones. Toss with just enough oil to coat and leave exposed pan between pieces for steam to escape.
The detail that makes a difference
Check doneness with a fork rather than color alone. Some vegetables brown before the centers soften, especially when cut into large pieces.
Make it work in your kitchen
Start with a small batch and taste as you go. Keep a note of the ingredients and proportions you prefer so you can repeat the result. For substitutions, consider texture and cooking time as well as flavor; a softer ingredient often needs less time than a firm one.
